5J is the preeminent brand from arguably the epicentre of the Spanish ham universe - Jabugo. 600 metres above sea level, Jabugo's unique microclimate of warm summers, cold, snowless winters, dry days and humid nights make it one of the most priviledged places in Spain for elaborating the best iberico hams. Founded in 1879, Sánchez Romero Carvajal is best known producer of the region, and for good reason.
Supreme quality is a synonym of Cinco Jotas; each of the hams produced at SRC are tenderly cared for and scrutinised by a maestro jamonero, or master ham craftsman, for 3 long years. The craftsman then chooses only the very best examples that have perfect organoleptic standards, in plain English meaning pleasing to your every sense: taste, sight, smell, touch. The smell is sweet and pure, the texture is creamy and you can feel the acorns melt in your mouth. The fat should squash under touch like a sponge demonstrating the succulent, high intramuscular fat hidden in the mouth-watering meat underneath.
Only a select few make the 5J grade (the rest being Noblanza) meaning what you get the best hams that SRC has to offer. It's a premium price, but as any true connoisseur will tell you: you get what you pay for.
